After a long period of weighing things up, I finally made the decision last week. I’ve decided to do something I actually wanted to do back in secondary school and that was almost 40 years ago now.

I’m going to properly get my chef’s qualifications. In September, I’ll be starting an accelerated chef training programme. Thanks to my experience in hospitality and as a chef, albeit without formal qualifications, I can complete it within a year instead of the usual two.

At the moment, I’m already working almost full-time as a chef at Van der Valk. I enjoy the work so much that I’ve decided to scale back my work as an IT professional. There is a lot of uncertainty in the world right now, and that affects my clients and new assignments. A permanent position as a chef offers me more security than the uncertain life of a self-employed entrepreneur. As a result, I’m now actively looking for an organisation where I can place my existing clients.

Over the coming period, I’ll be sharing more about my training journey. From time to time, I’ll also offer a bit more insight into what life as a chef is really like.
